After Zingerman’s Creamery launched the Classic Mini Brie, the response from our customers was immediate—and loud.
“Amazing!” They said. “So luscious and lovely and buttery!”
Buoyed by that feedback, we turned our sights on creating a brie from our flavorful, pasteurized goat’s milk. After all, our hand-ladled goat’s milk cheeses are something we’re truly proud of. Bringing those flavors into the familiar format of a brie seemed like a smart idea.
Spoiler alert: it was. In all honesty, I like it even better than the classic cow's milk version. The bloomy, porcelain white rind holds a smooth, nearly spreadable paste inside that gives a bright, almost citrusy twist above the bass notes of earthy, mushroomy flavors. Each mini wheel weighs four ounces, big enough to fit in the palm of your hand.
You don’t have to love goat’s milk to love this cheese. Heck, it might even convert you.
