Chris Roelli is a third generation cheesemaker in Wisconsin. His cheeses have won lots of awards, and while he’s proud of that, he’s not much of one for fanfare. He’d rather just be making cheese. Lucky us, because the results are phenomenal.

The Red Rock reminds me of his personality: straight forward and bold without too many bells and whistles. Visually, it’s striking: the cheese gets a deep, sunset orange color from the addition of annatto, with a stripe or two of blue for good measure. But it’s the flavor that will keep you coming back. Balanced between the savory, fruity, and tangy notes of a good cave aged cheddar with just a hint of a blue cheese streak, once you start eating it it’s hard to stop.
