Cacciatore Salami

Red Bear Provisions has quickly become one of our favorite salami makers, Working just outside Chicago, Illinois, salami maker Inessa Lysenko and her team use premium cuts of humanely-raised meats to create their salamis.

This Italian-inspired classic is no exception. Made and named for its intended consumer—cacciatori (Italian for huntsmen)—each salami, made with heritage-breed pork, wine, sea salt and a smidge of spice, packs a big flavor: salty, rich, unctuous, it’s intense and very porky.

It's such a crowd pleaser that I'm calling it now: you can officially call off your hunt for the ideal salami. This one's a winner.
