Bacon

Bacon endures so many short cuts. I’m talking commercial bacon, grocery store bacon: bellies injected with water to add weight; curers, if you can call them that, who speed up the process with too many chemicals; excess sugar and salt to overcome a lack of flavor; liquid smoke! Not one of these crimes is committed against the members of our bacon roster, the cream of America’s bacon crop. I highly recommend investing in three or four of them. Bacon freezes fabulously and there are few foods you can stock in your kitchen that reduce stress more effectively than a couple pounds of just-in-case bacon.
