We store them in our own cheese cave at our warehouse in Ann Arbor, set for high humidity and moderate temperatures. It's the kind of place that feels like spring in London—cheeses love it. We cut your cheese to order the day it's shipped and wrap it in our special cheese paper bags. That keeps it in great condition even without using dreaded cry-o-vac plastic wrapping, which suffocates cheese, killing its flavor.
Serve it at room temperature, warming for 20 minutes before you bite. You really can taste the difference.
