Olive oil has been a staple in Italian pantries since Roman times. In fact, olive oil was so prevalent in ancient Rome that today, Rome's Testaccio hill is built on the remains of huge piles of broken oil bottles. Flavors of Italian oils run the gamut of soft, silky, sweeter oils from Liguria in the north, to bold and peppery oils from further south in Tuscany and Puglia.
