American Spoon Lemon Curd

I'm not a jam girl. I like sweet things, don't get me wrong. But I don't remember exactly why I chose to get the American Spoon Lemon Curd for the first time. When I did, I was pleasantly surprised when I saw the really pretty yellow color of the curd. 

I've tried pastries made with lemon curd, and they're lovely. But I don't cook or bake, so I didn't know what to use it for. Someone said that they just spoon it out of the jar, so I tried that. It was just this lemon goodness. It holds up like a custard. It's like eating a yogurt for me—a dessert yogurt. It's a perfect combination of sweet and tangy. It hits the back of your mouth just right. 

I've thought about making little tortes (or tarts? I don't even know) with it, but I'm not a baker, so I just stick to my spoon. And while I've told guests about it on the phone, I've never shared it with friends or family. I don't want to share it—isn't that horrible? I want it all to myself.

American Spoon's lemon curd is made fresh in small batches. Due to the eggs in the recipe, it has a limited shelf life—usually just a few months.
