Ghanaian Cashew Brittle

There are a lot of nut brittles out there, so it takes an exceptionally delicious version to stand out. This cashew brittle, made in Wisconsin based on the traditional Ghanaian sweet snack Nkati cake, passes that test with flying colors.

Unlike other brittles there’s no added butter or baking soda which keeps the flavor and texture of the roasted and salted cashews at the forefront. Because the nuts are coarsely ground, not chopped into uneven chunks, each bite is evenly packed with sweet, nutty flavor.

Sweet and salty with a satisfying crunch, this snack will be staying at the top of my “must have” lists for a long while.
