Jijona Turron Almond Nougat from Spain

Turrón is Spain’s take on nougat. This one is made by Pablo Garrigós Ibáñez in the town of Jijona. They hand select and roast the most flavorful Marcona almonds they can find, coarsely grind them, and mix ‘em with orange blossom honey, sugar, and egg whites to hold it all together. The roasty sweet flavor of the nuts combined with the floral character of the honey creates a rich, satisfying confection that falls somewhere between a candy bar and a cookie.
