Atlanta-based Spotted Trotter adds a uniquely Southern twist to their bacon. They start with pasture-raised, hormone and antibiotic-free pork belly from Kentucky and Tennessee that is slowly smoked over pecan wood and then cured in Georgia sorghum syrup. Sorghum syrup is made by pressing the cane stalks of grain sorghum to extract the juice, which is then boiled and evaporated into a thick syrup. It’s sweet, but with a distinctively umami, slightly sour flavor that adds complexity to anything it touches.

These bacon slices are thick and chewy, with a lightly sweet, earthy flavor that will make them the star of any breakfast, lunch, or dinner.
