Spiced Plum Preserves

Plum perfect for cheese and more

Vermont is one of my favorite food states. Probably because it's full of really passionate, dedicated food makers producing righteously delicious stuff. 

The genesis for this spiced plum preserves started when two titans of Vermont's culinary scene paired up to create the perfect accompaniment for blue cheese, specifically Bayley Hazen, Jasper Hill Farm's signature blue. 

The teams at Blake Hill and Jasper Hill (the whole state must be nothing but hills) worked together on the recipe, but the crafting is all Blake Hill. They take fresh plums and simmer them with raisins, a tawny port, and a bit of spice to create a perfect pairing for any rambunctious blue or intensely flavored cheese. Just a dollop adds complexity and balance. It tames the piquant, prickly nature of most blue cheeses with its soft, spicy, sweetness. Amazing.

But don't let its origin keep you from trying it slathered on toast or biscuits or brioche.
